The vines|Vinification

THE VINES

We practice single and double Guyot pruning and the canes are tied down flat to encourage the even distribution of fruit.

      


• At 6000 plants/per hectare the vineyard is densely planted and it is traditionally cultivated with under-ploughing eliminating the need for systemic chemical weed killers.

 


• Crop-cleaning is a strictly manual job which consists of removing unnecessary central growth thus avoiding any machine-damage to the fruit or plant. It enables the grapes to benefit from the sun’s earliest rays; a reasonable degree of leaf-stripping later in the season and further crop-thinning is facilitated by this initial passage.

• The grape harvest is entirely manual ensuring that a rigorous selection process takes place in the vineyard. The grapes are treated as gently as possible being transported back intact to the chai in open, aerated trays.

           

THE VINIFICATION PROCESS

• The grapes arrive back at the chai, are destemmed and lightly crushed before being introduced into the tank on a conveyor belt thus avoiding the use of a pump at this stage and so keeping the skins intact.

• Our made-to-measure conical stainless steel tanks allow for a manual punching down of the cap and for perfect temperature control. The maceration period varies according to each selected lot, depending on the desired extraction of pigments and tannins. The tanks only hold 25hl which allows for the separate vinification of individually selected parcels chosen in function of their degree of maturity which varies from one vintage and one parcel to another.

          

• The wine is aged in French blonde oak for a period of between 14 and 18 months depending on the year. We use a three-year rotation system with our barrels, guaranteeing one third new oak every year.

          

• Our vinification methods are totally respectful of each vintage’s characteristics and we refuse to use any wine-making artifices designed to homogenize and smooth out these differences.

• The wine is bottled on the property without previous filtration; the wine’s limpidity is ensured instead with numerous rackings.

• Our bottles are stocked in perfect conditions with strict temperature and humidity control.
